It is used to evaluate defective coffee and to create coffee blends. Two tablespoons of freshly roasted ground coffee is placed in a 6 oz cup. The size of the ground coffee should be between French press size and drip coffee size and the beans should be roasted light. This means roasting should be stopped on the first crack or about 30 seconds roasting time. Coffee fragrance is the smell of the grounds before water is added.
