The rugged terrain of Narino, Colombia may have made it hard for farmers to transport their harvest to production areas, but this has not become a major problem for them. Transportation with the use of mules and jeeps has been the answer and up to now this form of transportation is still utilized. Colombia coffee employs the wet process of production. In wet processing, the outer covering of the seeds or beans are first removed and dried with substantial amounts of water. Coffee which undergoes wet processing is regarded to be of higher and better quality. Wet processing ensures that the intrinsic qualities of coffee beans are preserved. Coffee experts would certainly distinguish the region from which the coffee came with distinct flavor and aroma of the beverage. Coffee from Latin America is famous for its great balance and medium body and Colombian “Supremo” is particularly known for its fruity and nutty taste, soft and sweet aroma, mild acidity and good body.
